Banana crème brûlée with tonka beans

Ingredients
Dessert For 4 people
for 4 baking dishes of approx. 1 dl
1 ripe banana
2.5 dl of cream
1.5 dl of milk
a pocofava tonka, in speciality stores
45 g of sugar
4 yolks
2 tablespoons of corn starch
Crankset
1 small, firm banana
fine sugar to be caramelized

Cut the banana into small pieces. Bring the cream and milk to the boil with the banana pieces. Finely grate a little tonka bean. Let it rest for approx. 20 minutes. Filter through a fine-mesh strainer. Work the egg yolks with the sugar and corn starch. Stir in the cream and milk mixture. Pour everything into a clean pan. Stirring constantly bring the cream almost to the boiling point, until it begins to consolidate. Pour the cream into the baking dishes. Cover and refrigerate for at least 4 hours.

Useful tips
* Tonka beans are the almond-shaped seeds of Dipteryx Odorata, a plant that grows in Central and South America. Its aroma and taste are very similar to that of vanilla. Tonka bean is grated like nutmeg but should be dosed sparingly especially for flavouring desserts. It is not suitable for children under 6.
